The Roof Gardens, 2018-2023
Copper Beech has worked on The Roof Gardens since its inception. Our work has included;

Weligama, Sri Lanka, 2020
Working with the extraordinary Balmond Studios, Copper Beech has an F&B advisory and commercial contract to help build this residential and leisure facility on premium Sri Lanka real estate.
The Craigellachie Hotel, 2019-Present
Copper Beech Consultancy sits client side of The Craigellachie Hotel. We were brought in under a management contract to run the hotel, including all aspects of hotel operations and strategic planning. We have since completed a business transformation review that had increased EBITDA by 30%.
The Birley Group Caprice Holdings, 2007 - 2010
Hobbs oversaw the group of businesses including Annabel’s, George, Mark’s Club, Harry’s Bar, Bath and Racquets, The Ivy, Le Caprice, J Sheekey, Daphne’s, Rivington Grill, The Ivy Club, J Sheekey Oyster bar and Le Caprice New York.
MOL Campus, 2021
Copper Beech developed the concept for two restaurants in this Foster & Partners building. Our work included;

Sudeley Castle, 2019
Copper Beech Consultancy was invited by Sudeley Castle's owner to help them develop a branded food range. CBC sat client side and worked on this range, from strategy to branding.
Boulevard Theatre, Soho, 2018
Copper Beech was approached by theatre owner, Fawn James who wanted to open a world-class theatre in Soho with unique innovations such as a revolving stage. The theatre was to have a membership aspect and F&B offer. CBC advised on the F&B concept, membership concept, menu design and kitchen design.
Scott’s Mayfair, 2005 - 2007
Laying derelict after 2 years of being vacant, Hobbs rebuilt this iconic restaurant with a complete reimagining of all aspects. This included rebuilding relationships and trust with all stakeholders in order to regain the premises license that had been revoked and create exceptional stakeholder communications, a full internal redesign and solving the M&E problems with boreholes into the water basin beneath London to act as an environmentally sustainable way to cool water. An instant hit, this celebrated restaurant remains one of the most sought-after tables in the country. It was awarded the best New Restaurant in 2007 by Tatler.

Museum Of The Future, 2022
Copper Beech developed a new membership club concept for the Dubai Future Foundation in this, the most beautiful building in the world.

The Groucho Club, 2010 - 2018
In 2010 Hobbs joined the historic but ailing Groucho Club as CEO leading a renaissance on Dean Street. He championed brand Pop Ups such as Rio de Janeiro (Olympics), Los Angles, Ibiza, Kingham and Hay-on-Wye. In 2015 Hobbs led a management buy-out and bringing in investment to further develop and refurbish the club.
Soho House, New York, 2002-2005
Hobbs was part of a small, hand-picked team brought over from London to build and launch this first international Soho house. He oversaw all aspects of the restaurant build out and management team and then took on all elements of this 45,000 sq foot club, hotel and roof deck.
